    Thanks MR, just weighed it and it is spot on 4 kilo so my estimate was right. Definitely going to cut in half when i freeze it tomorrow.

      Picking up prawns and oysters in the morning along with the other nibbles like dolemades, taramasalata, marinated octopus (well the better half will be as i will be working )
      Bought the veges on the way from work today at a local fruit shop where there was no crowds.

      So Christmas day it will be some of the nibbles for starters, then a prawn cocktail with a killer cocktail sauce and a good old iceberg lettuce. Then the main course of roast turkey and home made stuffing with roast potato, sweet potato, carrot and parsnip and also a side of asparagus, then homemade trifle later and some nice chocolates. Still haven't decided on Christmas drinks yet but have just about every base covered, spirit, wine and beer wise. Thinking of just a nice glass of bubbles while opening the presents, or an untried cocktail of prosecco, blood orange cordial and vodka, might even make my favourite lychee martinis some time during the day.

      Christmas Eve dinner is just going to be mezze style with some of the nibbles, ham and haloumi, just want something easy and simple after working on the busiest day in retail.

        Never tried porchetta so I just looked it up. It looks good but as you said probably very rich.

          Sounds like you have an awesome plan there Horrie. I’m just on a bit of a break. I’ve just finished the sticky date pudding and caramel sauce. Trifle made yesterday except for the cream which I can do later. I’m going to work on a few salads this afternoon and then start prepping the pork crackling to be left overnight in the fridge ready for cooking tomorrow.

              Stage one done, had a lovely refreshing swim at Mahon Pools, was cloudy when left home but it was beautiful and sunny right on the coast. Just going to get the turkey prepped and have the bubbly chilling.

                  Prawns are peeled for the prawn cocktail, bloody nice prawns to as had some last night. Just going to make belinis to have while opening the presents. Have one old CD of Christmas songs playing, a lot of Olivia featuring in the mix so far. Will work out an official play list shortly after the belinis and checking on the turkey.

                    A few nibbles of pickled octopus , Taramasalata, artichoke , caper berries and crackers, a few Christmas CD's playing including Cher's Christmas album, John Travolta and Olivia and a mixed one and also Olivia's the Two of us Volume 1 &2.
                    Prawn cocktail and oysters next.

                    Turkey looking good but have to prep the roast veges soon.

                      I'm just about to chuck a heap of seafood on the BBQ and go from there (lobster, king prawn, scallops, baby octopus, barramundi...etc). Salads are already done so it's nice and easy.

                        Christmas lunch done and we are so full we couldn’t fit in any dessert. Guess we’ll have to have it later. The pork crackling was perfect. It’s a funny sort of Christmas Day with the sound of thunder and rain off and on in the background since about 11:00. Another big storm brewing as I type this.

Turkey and roast veges turned out well, seeing we paced ourselves it didn't feel like we over indulged but did have a bit of a sleep just around 5 pm, noticed when i woke up just after 5.30 pm that there were a few spots of rain but nothing much. Had a few spots on and off since but nothing much at all. Had the trifle just after 6 pm and it was good.
                            Plenty of turkey now for the next few days, plenty of left baked b=veges which will be another meal and also some trifle

                                Having ham for dinner tonight, didn't have any ham over Christmas so tonight is the night, going to do a cream and mushroom sauce and have it with pasta. Turkey again for tomorrow nights dinner with the left over veges. did have a turkey drumstick for lunch today though.More trifle tonight too
