  • Was in syd for a few days and went to some good spots, ribs and rump in manly was real good, pork, lamb and beef ribs for $55 was good value, lacked afew sides though.

lunch at sydney fish markets, wow, 1st time there, and will definitely be back, hand pick live mud crabs and anything you choose cooked while you wait.

breakie at the grounds in alexandria was very good with some livestock in the background! Cool little spot.

and the most impressive butcher shop in woollhara, victor churchill, like walking into a jewellery store for meat! Everything in showcases, even the butchers are behind a glass screen displaying their skills. Prices are like a jewellery store too

Did the bbq cooking course at the fish markets yesterday, hands on, learnt how to clean squid, fillet gar fish plus cooked lots of dishes which we all got to eat, a good day and it was nice walking around the fish markets early before the big crowds got there.

As for Grounds, there is a lot of good eating spots and food places all around that area now, a great bar called Vicinity diagonally opposite and a great food outlet called Salt Meat Cheese right next door.Have not been to Grounds as the line ups put me off and I don't drink coffee, may get there one day but plenty of other places around the St Peters/Alexandria/Roseberry/Zetland area I want to try first.

Sounds pretty cool at the fish markets horrie, did you book online? Just on the fish markets, I wandered into the deli there, and saw a prosciutto worth $400 per kilo! Was gonna ask for a sample but line was too long, you or syd concierge tried it by any chance?

Actually went to salt meat cheese, was very impressed by there salt collection(bought some hymalayan salt and a grinder, real big spender!) and sampled some nice cheeses, but only went cos was next door to the grounds.

As nuts as it sounds I have eaten Hammon the spanish version of prosciutto that was $1000Kg, I would go every day and buy $10 worth then go to the bakery and buy 2 bread rolls and smash it. It was enough for 2 sangers lol, basically it melts when it hits ur mouth mmmmmmmmmmmm. Trust me go to barcelona ohhh yeah cant wait to eat it again some day.

Had a $300 voucher from my last birthday which I had to use that is why I took the BBQ class, almost took the Alessandro Pavoni class at Ormeggio at the Spit in early Feb.Like the look of the paella one and also the yum cha one also but I would have had to get more people to use the value of the voucher.

I don't drink coffee because I have some sort of allergy to it, have had 5 cups in my life time and have been violently ill after all of them, not very pretty even the smell of coffee makes me feel like heaving.

Yep you book on line, they have a huge list of different classes, it was very full on the one I did but fun in the end.Was down at the Queen Victoria markets in Melbourne October last year and they had a $400 proscuitto there but didn't get a chance to try it.
Really like salt meat cheese and I love how you can sample a lot of the products.

I worked at a high end butchers for a long time and was very lucky to eat some of the best Jamon Serrano and Prosciutto that we import to this country. Literally melt in the mouth shit.

Also some marble score 9+ wagyu beef, even the eye fillet, awesome. I have converted many an Easts fan on holidays.

That is just the start, some of the meat I've been lucky enough to try has been great, but some of the seafood up here with several friends working in that industry, it's never dull a BBQ at my joint.

Minger my old boss ran Churchills for years, I've gotta check his place out next time I'm down. The fish markets sound like a happening too, been years since I've been there.

And Horrie that sux big time about the coffee. I just love waking up to a short black every morning.

Serrano Ham is a gift from god lol

I always say that u can judge a choice piece of meat by tasting the fat first, it should taste like butter and melt in ur mouth with a very clean taste.
Both my folks where/are awesome cooks and thats where it started for me, I then went on to manage 5 star hotels and always found myself in the kitchen. I was lucky enough to have worked for a chain that I travelled to many diff countries and ate awesome food all over the planet. These days I am a closet chef at home trying to impress my friends with my outdoor kitchen.

SC you nailed it the flavours in the fat.

I recall you built a pizza oven in your yard??? I'm jealous that's my dream to have that sorta outdoor entertaining setup. One day my friend.

I have a mate up here who has similar, the pizza oven, the double BBQ with a plate and open flame and a smoker. Awesome place to visit when you add the pool and obligatory room attached with Fox etc. watched the odd Easts game there.
