Went to the coast last weekend .Caught a couple of nice Jewies and picked up some Sydney Rock oysters and bought them home. Scored the top side of the fish, stuck lemons and butter inside, rubbed in some Garlic and herb salt with olive oil and baked in the oven until the skin was crispy . Ate the Oysters with a few coopers pale ales before the fish was ready then downed the fish with a few more.. Best fresh food this side of the mountain.. I am the King!

Another one I made that the kids used to love was brown some chicken and some garlic in a pan, some sundried tomato pesto and a some cream or low fat. Add some herbs and pour over your favourite pasta. Cracked pepper and parmeson if you fancy...pinenuts and garnish with semi dried tomatoes or capsicums. Alternatively instead the chicken, simmer the sauce and add some mussells.......you could infuse some white or red wine to the sauce too.
Went nice with a nice NZ semillion or even a chilled Lambrusco or two.

Originally posted by redwhiteblueIf you get stuck for something sweet to make in a hurry, I highly recommend this Donna Hay recipe. It's just chocolate coconut rough and I made some last weekend because we had Australia's Biggest Morning Tea fundraising. I cannot believe how many people approached me or emailed me at work raving about it and it only took 5 mins and 3 ingredients. So much for fancy elaborate TV chefs. Just melt 400g of chocolate with 20g unsalted butter. Then stir in as much coconut as you want. Grease a biscuit tray and line it with nonstick paper. Pour the chocolate mixture in, spread it out and then put in the fridge. Take it out when it sets and then just break it up into pieces. If you want to be fancy, call it 'chocolate coconut bark' and people will think you are really a foodie..
Speaking of sweet things....my last x used to make the nicest buttermilk scones and they were bite sized ones. Some jam and cream on the scones warm and fresh from the oven for brekkie to go with a flat white/cappucino or latte if that is your thing....yum!...the x was sweet at times too....
BTW Your signature is a very good motto to have and to follow....its taken me a few too many years to realise that...Originally posted by boogie
