After SC's recommendation, Got all todays jobs done lawns, moving sheep etc.. Then got some live Costi mussels, Crushed tomatoes, garlic, chilli, basil, simmered down to very thick\almost sticking, steamed mussels in own juices, added mussels to thickened sauce with a glass of white wine including the strained juices from the mussels, heated and mixed through then tipped onto a large serving tray, garnished with fresh parsley and washed it down with a beer watching the sun go down over the ranges as a rainbow broke through distant clouds, the smell of fresh cut grass and thinking of the possibility of another Roosters MP... Can't beat that! Thanks for the tip SC.. Best arvo I've had in months.
