I did potato, carrot, onion, sweet potato and also did some cauliflower with cheese sauce. I seasoned the lamb with some rosemary and obviously made a gravy. The onions were so nice and really loved the parsnip, this one wasn't so sweet but had a real lovely savoury earthy flavour , carrots were good too, it was the one time that the other veges outshined the potato and sweet potato. Cracked a 2014 Voyager Estate Shiraz from the cellar to have with it.

I needed to balance out the expensive meal with a cheap budget meal the following day. On pumpkin, I actually hate roast pumpkin so don’t cook it unless I’m cooking for a bigger group with people I know will appreciate it. Funny thing is I do like pumpkin soup though. I do like a good pumpkin soup and the better half has a good recipe for a nice one with coconut cream but i do get a bit disappointed if i go to a cafe when i'm in the mood for a good soup and the only option they have is pumpkin. Better half does a really nice pumpkin and pine nut risotto which i do enjoy and we sometimes get some nice pumpkin scones from some of the local markets.
Going to be boring tonight and make a spag bol or a tex mex mince, a nice easy Monday night dinner.
Lamb will be tomorrows night dinner again.

Bought a slow cooker a few weeks back, bought lamb shanks to try in it, whenever I wanted to do it I was running out of hours to use the slow cooker, ended up making them in a casserole dish instead in 3hrs and they were really,really good. Haven’t made them for so many years, but will be back in my routine.
I’m not sure if I’ll ever end up using this slow cooker, anybody else use them? and am I missing out on doing so?

ism22 I was sorting my recipe folder the other day and found this Donna Hay recipe for you...enjoy! I'm going to try it with elderflower cordial as I can't have alcohol these days.
Limoncello and Coconut Cream Cake
2 cups desiccated coconut
1/2 cup caster sugar
2 eggwhites
2 litres vanilla ice cream
1/2 cup limoncello
1. Preheat oven to 120C/gas ⅓. Line a 20cm round springform tin with nonstick baking paper. Place the coconut, sugar and egg whites in a bowl and mix until well combined. Press the mixture into the base of the tin using the back of a spoon. Cover with aluminium foil and bake for 25 minutes. Remove the foil. Bake for a further 10-15 minutes or until crisp but not golden. Allow to cool and refrigerate until cold.
2. Scoop the ice-cream into the bowl of an electric mixer and beat on low speed for 1-2 minutes or until softened. Add the limoncello and beat until just combined. Pour on to the coconut base and freeze for 3-4 hours or overnight.Allow the cake to stand at room temperature for 5 minutes before releasing it from the tin (see above).
