Whats on the menu for dinner these days??

  • Chicken lovely legs done in a casserole of tomatoes, vinegar and french onion soup mix, served with home made potato wedges and steamed broccoli , zucchini and carrot. Have enough of the casserole sauce left over to either cook some sausages in or just have with pasta.

            I nearly put brie in my pies...having broccoli, butternut pumpkin and cauliflower. I keep my carrots for afternoon tea snacks.

              Lol, many many years ago I dropped a jar of pesto out of the fridge and it smashed on the floor and pesto went everywhere and I was cleaning it up for days afterwards, finding it in spots I thought it couldn't get to. Needless to say I have never bought pesto again.

                • I cheated and picked up a butter chicken from Costco today. Steamed some broccoli and threw it in as well. Served it with some jasmine rice and plain paratha.

                        No onions, but lots of pineapple.
                        I cheat these days and buy the base from the supermarket. The bowl for the dough was too hard to clean.

                        • Our boss gave us all some chokos from his garden. I'm the only one who knew what they were as we had them growing on a vine back home in Qld. They made me nostalgic for Mum & Dad's cooking so because it's a long weekend, I decided to slow cook a small piece of silverside. I don't eat meat much these days, in fact can go for months without it, however there is something comforting about re-creating childhood meals. I'll steam the last choko I have alongside potatoes, carrots and broccoli. Have some pumpkin coming tomorrow with my home delivery, so can do that then too.

                          For dessert, I made what started out as gluten free ANZAC biscuits as I was too sick to make them on the actual day back in April, however gluten free doesn't always hold together (due to lack of gluten ) so I smashed them all together with cranberries and have a great oat, cranberry, coconut and honey crumble. I'll pop back to Coles later and find some custard or cream etc to go with it..whatever is on special will go nicely with it.

                                Hopefully with beetroot on them, have a couple of jars or beetroot in the fridge that i pickled myself, love it on a hamburger.
