      Tonight I’m making some chicken enchiladas with lots of zucchini in the mix.
      Lasagne, canneloni or most pastas I will go back for seconds, had seconds with the lamb and risoni last night but still plenty left over but seeing we were going away for three days I froze the rest, haven't froze the risoni before as it usually enough for another dinner or my lunch at work . Love zucchini so great you are putting plenty in the enchiladas.

        Prawns were good, slightly sweet and not very salty, just had a squeeze of lemon with them. Oysters were decent too, small but nice taste of the salt water. Going to have pizza while watching the Swans.

          Speaking of zucchini, I also made my zucchini slice yesterday. The kids used to love taking a slice to school with them once a week. I still make it, cut it up and freeze it in portions. My daughter now takes it with her to uni. Any sort of pasta has always been a favourite in our house too.

            So much you can do with zucchini , i remember buying a zucchini cake at the Bundanoon hall markets and it was delicious, done a few stuffed zucchini dishes which have been good. Your zucchini slice sounds good.

            • The $15 Monday night steak and chips special at the Shoalhaven Heads Hotel, really decent steak, asked for medium and was cooked exactly like that, a small salad on the side and before that some very moorish Thai, sesame chicken wings .

                • Roast lamb tonight with all the trimmings. It’s expensive having a roast these days but this one’s for a special occasion and in honour of my late Mum.

                  • Tuna cannelloni , have stuffed the tubes and will make the cheese sauce a bit later.
                    For starters having peri peri chicken wings which one of the take aways at work were bombing out at the end of the day, just put them in the oven to reheat, going to have a glass of bubbles with them.

                      Hope it was a nice dinner in honour of your mum MR.
                      Having leg of lamb tomorrow night, with the rain pelting down here now and tomorrow not predicted to be great decided to get the lamb out of the freezer. Will get the veges after i finish work tomorrow. Have plenty of carrots so will get potatoes, sweet potato, parsnip, eschalots, garlic and maybe pumpkin, will crack a decent red to have with it.

                              Not really rainy here today but a very cool wind so still nice for a roast, the leg of lamb is just over 2 kilos so will get a few meals off it as there are only two of us, having roast carrot, potato, sweet potato, pumpkin and parsnip, also having peas. Will be cooking some small onions under the lamb too which will take on all the juices, have a lovely Rosemary jam which will put in the gravy. Now to explore the cellar ( really one of the kitchen cupboards )

                                My leg of lamb was just over 2kg too but there was five of us, though my daughter doesn’t eat much meat. There’s still plenty of leftovers and hubby likes to eat it cold on sandwiches for lunch. I did potato, carrot, onion, sweet potato and also did some cauliflower with cheese sauce. I seasoned the lamb with some rosemary and obviously made a gravy. I hope you enjoyed yours tonight and lol about the cellar!
