          I actually picked up a piece of cauliflower at the fruit shop when buying the veges and thought of doing it with a cheese sauce but thought its over complicating things so put it back and got some pumpkin instead, i have a bit of a love hate relationship with pumpkin so don't often do it with roasts but every now again i will cook it. The lamb was great and so tender, it was seasoned with oregano from the balcony but put rosemary in the gravy. The onions were so nice and really loved the parsnip, this one wasn't so sweet but had a real lovely savoury earthy flavour , carrots were good too, it was the one time that the other veges outshined the potato and sweet potato. Cracked a 2014 Voyager Estate Shiraz from the cellar to have with it.

          Had pineapple jelly and ice cream after wards.

            Sounds like a great dinner. I followed up my roast on Saturday with a boring meal of scrambled eggs and salad on Sunday! I needed to balance out the expensive meal with a cheap budget meal the following day. On pumpkin, I actually hate roast pumpkin so don’t cook it unless I’m cooking for a bigger group with people I know will appreciate it. Funny thing is I do like pumpkin soup though. I’ve never used parsnip in my roasts either and I don’t usually do the cauliflower either except for Christmas, but because the meal was in mum’s memory and she always did the cauli or broccoli with cheese sauce, I had to do it this time.

              I'm glad there is someone else who is not keen on pumpkin, i don't really like roast pumpkin at all, it is the least favourite of any vegetables to roast but i can eat it, thought i would bake a bit last night because i had not had it for ages, it was neither here or there, my overall dislike for pumpkin goes back to when i was very young and my mother used to make what she called golden potato, it was potato and pumpkin mashed together, i hated the taste of it and the smell used to make me heave, even my older sister would not touch it and it would sit on our plates till it went cold, even though i can eat pumpkin in some form now my sister still will not eat it all.
              I do like a good pumpkin soup and the better half has a good recipe for a nice one with coconut cream but i do get a bit disappointed if i go to a cafe when i'm in the mood for a good soup and the only option they have is pumpkin. Better half does a really nice pumpkin and pine nut risotto which i do enjoy and we sometimes get some nice pumpkin scones from some of the local markets.

              Going to be boring tonight and make a spag bol or a tex mex mince, a nice easy Monday night dinner.
              Lamb will be tomorrows night dinner again.

                    They probably do it because pumpkin is so cheap generally and they can really stretch it out. Give me a nice minestrone or bean style soup or a nice mushroom soup.

                        • Bought a slow cooker a few weeks back, bought lamb shanks to try in it, whenever I wanted to do it I was running out of hours to use the slow cooker, ended up making them in a casserole dish instead in 3hrs and they were really,really good. Haven’t made them for so many years, but will be back in my routine.

                          I’m not sure if I’ll ever end up using this slow cooker, anybody else use them? and am I missing out on doing so?

                            Slow cooked lamb shanks is one of my favourite meals in winter. I also cook them in a big baking dish or casserole dish in the oven for about 3 hours. I do have a slow cooker but don’t use it ver often I have to say. I do use it to make a beef curry but I’m struggling to think of what else I use it for.

                              Last night had beef and capsicum rissoles from Mountain Side meats butcher from Shoalhaven Heads, bloody lovely, had steamed carrot, zucchini , corn and potato bake with it.

                              • ism22 I was sorting my recipe folder the other day and found this Donna Hay recipe for you...enjoy! I'm going to try it with elderflower cordial as I can't have alcohol these days.

                                Limoncello and Coconut Cream Cake

                                2 cups desiccated coconut
                                1/2 cup caster sugar
                                2 eggwhites
                                2 litres vanilla ice cream
                                1/2 cup limoncello

                                1. Preheat oven to 120C/gas ⅓. Line a 20cm round springform tin with nonstick baking paper. Place the coconut, sugar and egg whites in a bowl and mix until well combined. Press the mixture into the base of the tin using the back of a spoon. Cover with aluminium foil and bake for 25 minutes. Remove the foil. Bake for a further 10-15 minutes or until crisp but not golden. Allow to cool and refrigerate until cold.
                                2. Scoop the ice-cream into the bowl of an electric mixer and beat on low speed for 1-2 minutes or until softened. Add the limoncello and beat until just combined. Pour on to the coconut base and freeze for 3-4 hours or overnight.Allow the cake to stand at room temperature for 5 minutes before releasing it from the tin (see above). Place on a cake stand or plate and serve immediately.
