I added some Moroccan seasoning to the onion when I sautéed it pre-oven to try and experiment with it a bit and make it less sweet but I could barely taste it. I may not have added enough. I’m trying out the baked chats tonight with dinner so will see how they go.
Yes, funny, i am not a big fan of chicken drumsticks by themselves but do like the lovely legs as you say more meat and less bone, i only buy them when i see them reduced though. There is one dish though where i do use the whole chicken legs, chicken in beer which i don't make very often but i don't think it would work with the lovely legs as you have to flour the chicken first.
Hope the chats came out ok for you, i usually just throw them together especially if i'm having fish, they some times come out differently but the last batch i did just came out perfect ( well according to the better half anyway )

Well the chats tasted great but didn’t come out as crispy as I would have liked. But that’s fine as it just makes me more determined to get it right next time. I’m not sure what I did wrong. Maybe it was the type of potato. But like I said they still tasted great and there were none left with people going back for seconds, so they can’t have been too bad!

Mine don't always come out really crispy all the time MR, sometimes they do, sometimes not as crispy but always fluffy on the inside, sometime i think it is how many i have on the tray and how long i have them in the oven which varies at times from around 45 mins to an hour. I left the last lot in the oven a bit longer than usual because the fish was a bit thicker than what i usually cook and so the fish took longer so i just left the potatoes in the oven . The thing that really got me about the last batch of potatoes i did that i had some cold afterwards and they were still so crisp on the outside and fluffy inside.
I cant put a finger on it as they often come out different quite often but the one thing is that i and the household always like them no matter what way they turn out.

I’m going to be making this in the next week or so.

Hope it turns out ok MR, its a favourite in our home, we always used to make it with beef mince but one day i accidentally picked up a lamb mince from Coles so we have always made it with that ever since, reckons it's better with lamb but it was still good with beef, i'm sure you will work out which works best.

I’ll probably try beef first as my daughter hates lamb. It’s a running joke now that whenever I cook lamb I only put one or two mouthfuls on her plate, and she still complains it’s too much. But I will try lamb some time as well. And I hope your lamb shanks are good tonight. I made mine a few weeks back now much to the daughter’s annoyance.

Crispy chicken tacos with salad, salsas etc for us tonight as it’s been a busy weekend with painting and landscaping planning.

To be honest lamb is my least favourite of all the meats as it is quite fatty but i love a lamb roast every now then and have always liked the shanks. I picked up the lamb mince by mistake at Coles as it was right next to the beef and when i realised i thought i would try it with the meatballs and risoni and i reckon it is better with the lamb now. I don't really like the lamb chops but Karen Martini did a Greek style dish with them on Better Homes and Gardens one night and i really like the chops done like that , it has red wine vinegar in it and it really cuts through the fatiness of the lamb.

You sound like you have been really busy so far this weekend. To be honest, its been the exact opposite for me, was able to finish work a bit earlier yesterday so ended up going out for drinks and a cheap dinner, was talking how it was nice to be able to get out a bit earlier and do something on the Friday night and also discussing some of the over seas trip, anyway was home early enough and opened a bottle of wine and caught up on a few shows, better half was tired so went to bed and i was flicking the channels just before i was going to bed and flicked onto The Towering Inferno which was just starting on 74, thought i would just watched 15-20 mins of it and then turn in, ended up watching the whole thing even though i own it on blu ray so didn't get to bed till almost 3 am, also somehow more wine got opened , to say i was struggling earlier today would be an understatement so really have done nothing until prepping the dinner, feels like i wasted a rare Saturday off for me but look back and thought, WTF i did enjoy last night so no reason to feel guilty.

It’s not wasted when you’re taking the opportunity to relax and enjoy some downtime away from the dreaded work. That’s the way I would look at it. Funny about the staying up and watching telly till 3 in the morning! Love it. The other half and I can do that some times - not 3:00 admittedly more like 1:30 - but when we’re getting near the end of a series and it’s getting really exciting binge watching you can lose track of time.

Agree that lamb is the fattiest cut of meat. I love the shanks and roast which we do a bit but not as much as years ago due to the cost. I do love cutlets but barely eat them these days again due to the cost. I make a devilled chops recipe occasionally as it’s an old in laws family recipe which hubby grew up with and still loves. Also, very occasionally I will buy a small pack of loin chops for a quick meal when it’s just the two of us.

                            • Yes , its the thing i used to love doing, if the better half went to bed i could put on a movie i know they probably wouldn't bother watching, it is usually one of the old Universal horror films from the 30 s and 40 s and the running times are generally not much more than an hour so even started at 11.30 pm or midnight it still would not be too late going to bed. Quite often would put on Frankenstein Meets The Wolfman or House Of Dracula which are just mindless viewing and a bit of fun and ones i can watch over and over again, of course there are other movies i would watch but these seem to be regular viewing if ii do stay up late.

                              • The shanks were great and a lovely rich robust tomato sauce with them, was naughty and put butter in the mash potato so gave it another rich dimension, had green beans, peas and zucchini with the mash on the side and with the carrot and celery that was in the sauce a totally satisfactory meal, have left over sauce and some lamb so will probably do the left overs with pasta or gnochhi in the next couple of days.
