      I find we make it with lamb mince now but beef mince is good also. We just about always add chopped zucchini when we make it now. With the risoni we use between 1.5-2 cups.


      1 Litre Vegetable stock
      500g beef mince (lamb mince is tastier)
      1 clove garlic, crushed
      1 egg, lightly beaten
      1 cup dried breadcrumbs
      1 tbsp oil
      4 tbsp tomato paste
      1/2 tsp rosemary dried or fresh
      1 1/2 cups risoni pasta
      2 ripe tomatoes, diced
      chopped parsley or basil (garnish)
      shaved parmesan, to serve

      STEP 1Combine 1/2 cup stock with mince, garlic, egg & breadcrumbs. Roll into balls.
      STEP 2Heat oil in a large frypan. Add meatballs & cook until browned all over. Pour over remaining stock, tomato paste & rosemary. Bring to the boil, reduce heat & cook, covered, for 10 mins, stirring occasionally.
      STEP 3Stir in risoni & tomatoes. Cook for 8 mins, uncovered, stirring occasionally, or until pasta is al dente.
      STEP 4Garnish with parsley & parmesan.

      Note: You can also stir in peas, chopped zucchini or anything you like really when you are stirring in the risoni and the tomatoes. If you find the mixture is drying out and the risoni is still not cooked just add more hot liquid and stir.

          We even had some leftovers for lunch today. I used beef stock instead of vegetable only because I used beef mince instead of lamb, but might try vegetable stock and lamb next time. Though my daughter will be very annoyed at that idea. I also put some chopped zucchini in it.

            Yes i have used beef stock to when i made it with the beef mince also but also did with vegetable stock a few times too. Once i started using the lamb mince though i have always used vegetable stock. That is the good thing though, you can play around the recipe and tweek it to however you want taste wise.

              Meat wise Pork, Bacon and onion sausages, buffalo sausages, lamb chops and pork chop.
              Vege wise zucchini, potato, mushroom, tomato, onion.
              Salad wise , coleslaw.

                Had bazura mussels again last night in Coogee, they’re always spot on with their sauce, just perfect, didn’t get them over Christmas as they were busy on the night I wanted to go there.

                  Still haven't been to Bazura since you mentioned about the mussels last time, do they still have the mid afternoon special for them you mentioned at the time ? I do love a good feed of mussels, would be one of my favourite foods.

                  • G'day Roosters I made a fiery Goan prawn curry with a spice tailor kit and home-grown thai chilli's. Served on jasmine rice with garlic naan bread . Very hot and spicy .

                    • I made homemade chicken burgers and oven baked wedges last night. It’s a meal that’s always gone down well with the husband and kids and tastes better than the ones you get at KFC and the like.

                        Must have been the night for chicken MR, the better half made a chicken lasagna and it was superb, have enough for left over for another meal tonight if we don't go out or tomorrow nights dinner.

                          Love the “spice tailor” kits, I tweak a couple of them with just a couple more ingredients(extra chilli, coconut cream,etc) but I think they are pretty spot on, and don’t taste like a packet meal if that makes sense.

                          the butter chicken one is my favourite.( just add extra chilli)

                            I’m going to have to check this out Milanja as I’ve been looking for an easy butter chicken kit for a quick meal. I’ve tried a few jar options and recipe bases (which are better).

                              Had the butter chicken spice tailor tonight and with extra chilli , it's my sons favourite and he demands that we have it weekly .

                                I throw in a good pinch of chilli, a good nob of butter, some chicken stock and to make it “healthy” I put a packet of frozen broccoli in there, weird, but I really enjoy the broccoli
