Have made it so many times now, that when we ordered butter chicken from a place in Barton, I enjoyed this one much more, comes out with a nice reddish colour and a nice oil.

I put in a good spoon of butter too . Chopped onion and chilli, carrot and cubed potato or whatever veggies that are lying around. I have used brocollini and sometimes green beans and I always up the chicken thigh fillets to 500g . Got a Japanese rice cooker the best invention ever and I put some cardomon pods in the rice .

      • We’ve been on a health kick here this year and have pretty much completely stopped eating any form of junk food, soft drink and booze

Tonight we had a lovely Japanese dish Ontama Salmon with rice ginger carrot shallots and boiled egg washed down with water. Absolutely delicious and very healthy.

Well I’m definitely looking into this. Thanks. It’s funny about 6 weeks ago I was looking for a new butter chicken recipe base and I ended up with Masterfoods I think. I wish I knew about this one then. I notice it’s on special in Coles this week too.

Oh good, I usually by a couple when they are on sale, chicken thighs work best with it.

you can just try it as it is first time MR, then you can adjust flavours/veggies as you please, but I do recommend adding some chicken stock and or coconut/cream and butter to give you some sauce, because I found it doesn’t produce much sauce if you just use the supplied ingredients.

also brown your chicken first so the spice blend doesn’t burn

            • Have never attempted to make butter chicken as there is a take away/ cafe down at Sydenham which does a decent one and its as cheap as chips so if i ever feel like it i just get it from there

Tonight for dinner, baked leather jackets with home made wedges, asparagus and green beans.

                Caught by yourself?

I treated the family to a thai red duck curry. Duck breast was on special at Coles.

Unfortunately not, bought them at the fish market at Marrickville Metro, bloody nice though. Do have the hand lines ready to go fishing for them, its just getting the time off work to do it, hopefully my old favourite spot on the harbour still fishes well for them, haven't been down to the spot to fish for about 10 years, was a great spot for the jackets, hope it still is then when i get the chance to go again.

Sounds good Milanja. Thanks for the tip. I remember adding the coconut cream to the masterfoods one too. How much do you recommend of each - the cream and stock?

I did just about a cup of chicken stock first time I made it, the coconut cream is if you like a bit more richness, so you can decide if you think you need it next time.

I think the first time you make it, your taste will tell you if you want extra chilli, cream, butter, and so on, you may just like it as it is, but you sound like a good cook, so I’m sure you’ll want to tinker with it in your own way

Thanks Milanja. Yep, I do like to play around with recipes until I get it the way I like. Sometimes it takes quite a few tries!
