Whats on the menu for dinner these days??

  • BBQ tonight, have rump steak and beef sausages as the protein and also doing beer soaked onions, potato, zucchini, mushrooms and tomato on the BBQ and a small green leaf salad.

        • Out of curiosity, is anyone posting here a trained chef who has had some sort of training or maybe had some goal to become one? Plus, has anyone posting here ever owned a restaurant/café, been a part owner, or had some type of interest as an investor?

            I did cooking classes at the Presbyterian church hall as a 12 year old . It was me and my mate and a room full of chick's. Highly recommend this lurk it set me up for home cooking for life and it was '10 girls for every guy'. Roasted and seasoned chicken, baked potatoes and pumpkin, steamed broccoli, carrot and peas with gravy here tonight Bon appetito

            • Chicken schnitzel , pan fried potatoes with rosemary, steamed zucchini , carrot and broccoli.
              Made enough schnitzel for another meal.

                My sister is a chef. My cooking skills went from 0/10 to 3/10 just by having lessons with her on the basics. That was about 10 years ago.

                Based on the Bates scale I am now a 5/10 and enjoy cooking especially freshly caught seafood.

                    Was the Chicken Schnitzel Home made or store bought and frozen?

                    I remember one episode of Kitchen Nightmares with Frozen Chicken Schnitzels - they looked the size of a small dinosaurs foot - Chef Ramsay was far from impressed especially when the menu said every thing was fresh

                      Home made, breadcrumbs home made to and i always put in some parmesan cheese in the crumbs. Once in a blue moon i will buy a preprepared one from Chicken George at Marrickville Metro but 99% of the time i make mine from scratch.

                      Made enough for another meal so had that tonight just with salad.

                        • Risoni and lamb meatballs. Were going out tonight but the weather starting to look a bit iffy so staying in and will go out tomorrow night.

                              It was one of those things, was planning to go out for dinner tonight but was feeling a bit tired getting a bit of sun today at the pool and the weather forecast not being great so decided against going out which is good as it is bucketing down now. So quick pantry and fridge check. Lamb mince in the freezer, tick, fresh tomatoes, tick, zucchini, tick easy peasy.
                              Oven not working but stove and grill are working, another week till the new stove is delivered, didn't realise i would miss the oven so much till it stopped working.

                              • Fish cakes and salad

                                Fish cake recipe

                                Approximately 500 grams flathead. Fillet and skinned then steamed. Any fish will do.
                                1kg mashed potato with plenty of butter as butter makes everything taste great.
                                1 onion diced then cooked till it's translucent.
                                Fresh coriander, spring onion, 2 cloves of garlic finely chopped.
                                Chilli flakes, salt and pepper.

                                Mix all the ingredients together.

                                Make your cakes or balls any size you like.
                                Coat in Panko crumbs.
                                Shallow fry till golden brown. Approximately 3 to 4 minutes each side. I like to use Rice Bran Oil.
