You'd struggle if your chef resigned.

Could you imagine eating frozen meals or good ol overcooked steak and eggs?

Yes - TV Dinners would be the fallback although I can cook a T-Bone and Sausages - chips and veggies.

My Wife see's cooking as a release from her GP work - has a mountain of books full of recipes -

          • I made some pizzoccheri the other night (a Valtellina specialty) and was relatively happy with the end product. Didn't use Valtellina casera as the cheese (couldn't source any) but found a close enough replacement from a new cheese shop at the Belco markets (they imported a good asiago from the northeast of Italy which had a similar flavour/texture).

Also opened up a bottle of chianti and poured a few cups of limoncello.

                    That sounds so good!.

Bangers were pork and fennel cooked on the bbq so they got that nice flame and smokey flavour. I decanted some of the ragu bolognese sauce from last nights dinner. Added red wine reduced and made the gravy. Peas were cooked in butter low heat and for around 1 hour so they were sweet and mushy.

Going to make something new tomorrow night. Flathead fillets wrapped in rice paper (so they look like a spring roll) and shallow fried in butter. I reckon they'd be out of this world with blue swimmer crab!

I would be very happy with a feed of fresh Flathead.

Apparently flathead fillets are now $50 plus a kilo. I'm glad I can catch fish.

Luderick aka Blackfish has never been more popular as it's $20 odd a kilo. The punters don't realise that it's basically by-catch caught in a net which hasn't been bled before it dies. Luderick is delicious but you must know how to handle and prepare it for the table.
