I rate Pearl Perch, Coral Trout and King George Whiting as the three premier eating fish although realistically they aren't an every day eating fish in Sydney town, price or availability wise all though Coral Trout is popping up at the markets more now. Will be up around South West Rocks next month so hopefully will snag some Pearl Perch while there.
As for every day affordable fish or ones i catch i rate
Leather jackets
Luderick
Gurnard
Flathead
Sand Whiting
as my favourite five eating fish, some places in Sydney are selling jackets for $25- $28 a kilo now but if i buy them i have a small fish shop i go to where they are between $ 7- $12 a kilo. I do prefer to catch them my self and some days i don't have a problem catching between 4- 20 decent size ones, other days they can be so frustrating but there is never a dull moment fishing for them.
