    I'm the only one who eats eggs in our household so sometime they will sit in the fridge for ages untouched, better half will use them for coating the crumbing on the schnitzels or other cooking things but wont have eggs by them self .

          • Fish and chips tonight.

            Oven baked leatherjackets and either oven baked home made wedges or roasted potatoes. Green salad to go with it and maybe some asparagus if i see any decent ones while i'm out, apart from the asparagus i have everything already at home so don't need to go out if i don't feel like it later.

            • Going to make a bruschetta with garlic, roasted cherry tomatoes with Greek oregano and balsamic vinegar and crumble fetta on top, a nice starter before the leatherjacket, potatoes, asparagus and green salad. Going to the asparagus in a bit of olive oil and lemon verjuice.

                    How did you go with all your veggie meals over the week Horrie? I remember you said you won a big tray of veg.

                      Most used MR, still have a corn cob and green capsicum left and going to use the cherry tomatoes tonight, most got used in a stir fry, the eggplant especially in it was delicious. The zucchinis got stuffed with lamb mince and rice and the left over zucchini pulp is frozen for a later pasta dish.

                      Wanted to do a roast seeing with got the new oven but it's been to warm, even today its only 24 c but so humid, thank goodness for the air conditioner.

                            • Chicken and veg stir fry with Hokkien noodles plus an egg mixed through at the end. 15 minute prep. 3 to 4 minutes cooking time. Quick, healthy and easy!
