  • Whats on the menu for dinner these days??

    Howdy all,

    I have been in a really bad rut cookingwise (eating out too often too) and don't want to cook the same old stirfry dish or basic steak and veges or tv dinners I have been eating lately...its a bit like a bomb across to Tupou..a tad predictable.

    If anyone has any suggestions on what to cook or what is your favourite creation to conjour up in the kitchen or out on the BBQ....put them in here.

    Also what beverage alcoholic or otherwise you like to have with your culinary delight too.

    Head down to Eastern creek near the Mount, target species are blind mullet[no bait needed]. Once you catch a couple, take them home and fry with brown sugar and wash down with a nice bottle of Doctor Jurds Jungle juice. [best eaten fresh]

      Mount Isa????.......

      The mullet, I hope it's Thai cuisine.... but the nearby pacific variety from the Mekong Delta is not meant to be very good. Just add a steak or a $illy sausage and it will be a new way of having a surf and turf. ....and was it $tan Jurd's jungle juice?????

        A nice Sauvignon Blanc or Verdelho will go well with salmon.

                  How about a Mexican Tortilla pie?

                  Brown some mince in a pan, add a red onion and capscium and saute, add a tin of toms and a small tin of corn, some mexican chilli powder (perhaps even some red kidney beans) and let simmer until mixture is quite thick.

                  Then simply put a tortilla in the bottom of a sprinform pan, spoon some of the beef mince over and top with a little cheese, and repeat the laywers 2 or 3 times, topping with cheese. Put in oven (around 200) and cook until cheese is melted and browned a little on top. Let rest for a few mins and then unclick the spring form pan. No hassle in getting it out that way.

                  You can make your own variation of it, but that's just a base of sorts to get you started.

                  You can have it with salad, vegies,wedges, chips, bread, whatever. Is OK to freeze as well, which is why I'm having it for dinner tonight, as I had one last piece in the freezer which I've taken out.

                  I just can't be asked to cook during the week so have big cookups on the weekends and have a variety of different meals in the freezer that I get out for weeknights. One of the benefits of living on one's own - don't have to worry about what anyone else wants to eat.

                  Now it's getting colder I'll be making big batches of hearty soup to fill the freezer with. Nothing better than a big bowl of soup and some nice crusty bread on a winter's night.

                    Thanks NC......sounds a bit advanced for my limited chefery skills. I will give it a go maybe on the weekend to go along with RWBs suggestion so thanking the ladies from the pen, what about the fellas?

                    I am in a boarding/share house situation with my brother and his wife and their kids so I don't have a lot of freezer space. However, I'm sure I can make space for it....who knows maybe they will want to sample mine if it comes out ok.

                    I will let you know about my successes and failures in the coming weeks....

                      Having veal scallopini cooked in a white wine and caper sauce with potatoes done in olive oil and rosemary with a side salad to night.

                        That sounds disgustingly yummy novice chook
                        I still love a good spag bol but sometimes I just make a tex mex style one instead with kidney beans and corn and chuck in a packet of taco seasoning, something just a bit different without being to different.
