Sometimes those throw together smash them up dishes are so good, you can basically do anything with a bit of mince and a can of tomatoes, also If I haven't got a lot of time I make a cheats casserole with cream of chicken soup and a tin of tomatoes, basically use some bbq chicken or cook up some scrappy bits of chicken breast then chuck in some veges like zucchini, carrot, fry them up a little bit then chuck in the soup and tomatoes and simmer away, you can also chuck in some frozen peas and corn and cook until ready, you can add a bit of white wine to the sauce when cooking if you want.Serve with pasta or rice. Not an earthshattering recipe but quick and easy and quite tasty.

Went to the coast last weekend .Caught a couple of nice Jewies and picked up some Sydney Rock oysters and bought them home. Scored the top side of the fish, stuck lemons and butter inside, rubbed in some Garlic and herb salt with olive oil and baked in the oven until the skin was crispy . Ate the Oysters with a few coopers pale ales before the fish was ready then downed the fish with a few more.. Best fresh food this side of the mountain.. I am the King!

Must have been pretty small jewfish if you did them that way in the oven, mind you Lifeboat the fish shop I go to at Brooklyn have the small soapy jewies so yeah, they are legal size but small for jew fish.Best size to eat are probably around 8-12 kilos and cut into cutlets, they are nice to eat up to about 20 kilos .
Give me a feed of blackfish or leatherjackets over Jewfish though any day.

Where I stay at Wobby they nickname jewfish alley, have seen some good jewfish caught there off the shore line and also just metres out with people in their tinnies.I have caught a few there but only small fry between 45-61 cm, all returned, I am happy to get a few bream and flatties, all good tucker.A couple of years ago a guy in the house next to where I stay at Wobby caught a jewie off his wharf which hit the scales at 44lb , beautiful fish and it was interesting watching him getting it into shore.

HH you are on fire with the fishing and the cooking ATM..

Another one I made that the kids used to love was brown some chicken and some garlic in a pan, some sundried tomato pesto and a some cream or low fat. Add some herbs and pour over your favourite pasta. Cracked pepper and parmeson if you fancy...pinenuts and garnish with semi dried tomatoes or capsicums. Alternatively instead the chicken, simmer the sauce and add some mussells.......you could infuse some white or red wine to the sauce too.

Went nice with a nice NZ semillion or even a chilled Lambrusco or two.

Had a mothers day bonfire, had some prawns olives and Sav blanc to start while cooking a lamb and beef roast in the camp ovens with vegies... Company, food and fire was great and of course I capped it off with a couple of 101's..

It's just chocolate coconut rough and I made some last weekend because we had Australia's Biggest Morning Tea fundraising. I cannot believe how many people approached me or emailed me at work raving about it and it only took 5 mins and 3 ingredients. So much for fancy elaborate TV chefs. Just melt 400g of chocolate with 20g unsalted butter. Then stir in as much coconut as you want. Grease a biscuit tray and line it with nonstick paper. Pour the chocolate mixture in, spread it out and then put in the fridge. Take it out when it sets and then just break it up into pieces. If you want to be fancy, call it 'chocolate coconut bark' and people will think you are really a foodie..
Lol I will pass on that recipe to Mom...she digs that kind of thing.

Speaking of sweet things....my last x used to make the nicest buttermilk scones and they were bite sized ones. Some jam and cream on the scones warm and fresh from the oven for brekkie to go with a flat white/cappucino or latte if that is your thing....yum!...the x was sweet at times too....

BTW Your signature is a very good motto to have and to follow....its taken me a few too many years to realise that...
