I've never put onions and carrots in the pot. I just do the usual, malt vinegar, brown sugar and lots of cloves and bay leaves. Serve with a nice white sauce and vegies - usually carrots!

We do it at home here with pineapple juice, brown sugar and dried mint. Do the white sauce with grain mustard and have with mash potato , carrots and usually beans.

Ooh, that’s different. Sounds yummy. Yes we have mash too with the carrots. I put a small dash of nutmeg in my white sauce. I tried mustard once too but everyone preferred the nutmeg so we’ve sort of stuck with it. I love hearing other peoples recipes as it gives me some new ideas. I also love the silverside cold on a sandwich the next day with some corn relish, which should appeal to A Country Member given his corn fetish.
