Good old curry sausages and rice tonight. I use a lot of chopped up carrots and apples in my sauce.

One of my favourite comfort dishes curried sausages. I always put potato and carrot in mine and sometimes peas. Then its a toss up whether i put apple in it or sultanas in it.

That is the thing, there are so many great quality sausages around here from the old fashion butchers and artisan producers and even some quality ones from Coles and Woolworths too. For the curry sausages you cant beat the good old fashioned thick beef sausage though.

Yep. Stubby, bite sized chunks work best imo.

No haven't tried the Japanese curry to do them but it would work perfectly as i like the Japanese style with chicken thigh fillets. The sausages i like done the old fashioned 70's style westernised or Australianised curry way
Going to try to do mussels in a Vietnamese style curry one day if i don't get overwhelmed by the amount of ingredients going into the curry sauce, had the mussels done in a Vietnamese curry when i stayed at the Q Station a few years ago and they were yum.

Yes comfort food is a good way to describe it and like you I like to make it the old fashioned 70s way.

I found some really nice butterscotch sauce here recently and have been drizzling it on cheesecake with a handful of fresh blueberries on the side.

Tonight I will be making a Thai yellow curry with prawns, butternut pumpkin and broccoli.

Tomorrow night will be a cheats dinner. Costco chicken and pasta bake. I will have very minimal input by doing up some simple steamed broccoli and carrots on the side.
