Whats on the menu for dinner these days??

  • I'm down for morning tea duty in a few weeks so going to test out a recipe for snow cakes in the pie maker on the weekend. Just use a packet mix of vanilla cake and 300ml of lemonade apparently. Hope it works with gluten free mix so will test it on the weekend.

              They are from Roll'd and they supply the Coles just up the road from me. We also have an outlet in our company food court. I can eat them as there's no gluten (I just avoid the sauces they provide). Last night I had a Thai prawn stir fry and also got a green papaya salad to keep for lunch. It tastes better the next day.

              Also going to make sweet potato and zucchini fritters in the pie maker with corn and peas.

                That is one good looking salad. I have 3 boxes of gluten free Hoki bites in the freezer (all Australian product) and I'll often do something like that for Friday nights. Getting salmon again on special with my home delivery and will cook it up for lunches with cauliflower rice and peas during the week as I like to have my main meal during the day even when I'm working from home.

                • I made my vanilla gluten free cakes in the pie maker and going to have them with frosting and blackberries and strawberries..sort of a North Sydney Bears dessert..blueberries have gone up in price..

                      I'm not used to sugar or frosting...yikes...they are quite nice plain. From now on, if I use the cake mix again, I'll take the frosting mix to one of the guys I work with as he cooks a lot with his children.

                          • Beetle leaf prawns, steamed scallops, prawns with eggplant and grilled chicken in green curry at Thainesia after the game yesterday.

                            Have a whole chicken out for dinner tonight, will either roast it or do it Greek style.
