Betfair's different from the standard bookmaker sites because you're actually betting against other people, as opposed to betting against the bookmaker. Betfair makes it's money by taking a commission from punters when they win
And you can even choose to be the bookmaker if you want. To use your Carney example, if you thought Carney was not going to have a good year, you could go on there and offer a price about him winning the Dally M. If someone wants to back him at the odds you offer, it's a bet. You can decide how much money you want to hold, you just need to have enough $$ in your account to pay up if you lose.
More importantly though, the odds are generally better. Carney's $30 on betfair, and $26 with Sportstab

Centrebet for me is the most simple and direct one to use.
Their best feature is that you get to pick you own lines.
Eg if the official line is Roosters -6.5 and you don't think they can cover, you can adjust it anywhere from there to Roosters 20.5+ obviously at a lower rate. It's great if you are in the punting game and don't just listen to what others tell you.

But when choosing a particular site, it really does come down to -
1) Who you're familiar with
2) Whether you trust the name
3) The appearance of the site and how easily and effective it is to use
There's no point having the best odds if your visitors / users haven't got a clue how to navigate your way around the website.
